Seeing Green: Braintree Bakery Supplies Celtics Themed Bread from TD Garden

BRAINTREE, Mass. (WBZ NewsRadio) – If you don’t already see green, take a look at the menu at the 1928 Club at TD Garden and you’ll find Boston Celtics-themed bun sandwiches, something a Braintree Bakery provides for NBA Finals home games.

Greg Acerra’s 200,000 square foot bakery at FireKing Baking Company in Braintree has room-sized ovens, automated assembly line machines and 150 workers, all with specific tasks. Acerra told WBZ’s Kim Tunnicliffe that making the green buns and rolls for the sandwiches sold at the Garden involves a lot of food coloring.

“When we pass the dough through these machines, we have to take the whole machine apart because that green dough would end up in the next pass, and then someone gets green bread with stains. So it’s a lot of work to break machines down and clean them,” Acerra said.

Even though he says that FireKing Baking Company doesn’t make money making the colored products, Acerra is still having fun. During Wednesday night’s game, Acerra purchased the “Ultimate Champion Cheesesteak,” which included its green roll, lobster, truffle, and Kobe beef, all for the price of $150.

“Sometimes you just have to have fun with what you’re doing,” Acerra said.

Acerra says the effort originated in Fenway Park, when the FireKing Baking Company made red-colored buns for the Red Sox. Officials there liked the idea so much that they asked if the bakery could make green-colored buns for the Celtics and black-colored products for the Boston Bruins.
