8 Reasons Your Vegan Baked Goods Are No Good

Charles E. Hill January 20, 2022 5 min read

Vegan baked goods are just as good, if not better, than non-vegan baked goods. It’s just about using the right steps to get the best results. Vegan cooking mostly comes down to practice, and these tips can help you get more skilled faster.

here is some great tips to help you make better baked goods without eggs or dairy.

1. You’re not using the right egg substitute.

A very common reason why your vegan baked goods may not turn out is that you are using the wrong egg substitute. Eggs are a tricky thing to substitute and not just any option will work in any recipe. Some replacements are used for different things.

Applesauce is more of a binder than a leaven, while aquafaba is more of a leaven than anything else. This means that these two options would have to be used in different recipes for this to happen.

If you’re making a light sponge cake, a rising egg substitute is best. On the other hand, fudgy brownies would be best made with applesauce or banana for binding and moistness.

When you don’t use the right egg substitute, your baked goods can come out sunken, dense, rubbery, or dry.

2. You’re not using the right butter substitute.

Vegan butter substitutes are very easy to use, because there are so many options! You can choose a solid oil like coconut oil, vegan butter, or regular oil.

As with egg substitutes, you always have to choose the right option. Some butter substitutes work better in some recipes and less effective in others.

Coconut oil, for example, works best in heartier recipes because it can be dense. It doesn’t work very well in delicate cakes or cookies. Vegan butter is better for most cakes because it mimics the closest real butter.

If you don’t choose the right butter substitute, your recipe can become dry, greasy, or the whole recipe can fall apart.

3. You try to be too healthy

It’s easy for people to try to make their vegan baked goods super healthy. But it can actually sabotage your efforts and produce not-so-tasty baked goods.

Sweets need a lot of sugar, flour and oil to taste good. Unless you’re a very skilled baker, making super healthy foods isn’t always perfect.

Ingredients like sugar, flour, salt and fat are all major components of a recipe. They help the recipe come together in all sorts of ways. So it is better not to try to make too healthy recipes, otherwise they may not turn out.

If you want a very healthy treat, try to find a recipe that is already healthy IInstead of trying to change a recipe to be healthier.

4. You aim too high

It can be really exciting when you realize the type of vegan baked goods you can make! There are so many options and substitutions to try.

However, when you’re new to vegan baking, it’s best to take it slow and start slow. Avoid choosing non-vegan recipes upfront and instead find vegan recipes to try. It is better to get the hang vegan baking before leaving and trying to vegetate other recipes.

You also want to avoid aiming too high when it comes to changing recipes. Don’t opt for recipes that use animal products, as they often won’t work when veggie unless you really know what you’re doing.

Even if you want vegan angel food cake, the odds of successfully veganizing a cake made mostly of eggs are slim. So try to make it easier for yourself and choose more realistic recipes.

5. You mix too much

Overmixing is something anyone can do, but it’s especially easy to do with vegan baking. Because vegan products already tend to be dense, it can be so easy to overmix the yogurt batter to create a dense, chewy baked good.

The more you mix, the more gluten begins to develop, creating tough strands that give your baked goods an unpleasantly tough texture. To avoid this, you’ll want to mix your ingredients as little as possible.

Try to mix the ingredients in rotation to avoid over-mixing, and remember that a few lumps are better than a hard baked good.

6. You’re not adding enough moisture

Moisture can take the form of a liquid or a fat. Vegan baked goods can get an unpleasantly dry consistency if you don’t add enough moisture.

To avoid this, be sure to replace the dairy. Don’t just use water because it’s not the same. Try to use plant milks instead. Ddon’t skip the fat either. Add coconut oil, olive oil, vegetable shortening or vegan butter. This will ensure that your baked goods are moist and tender as they should be.

7. You are not setting the oven temperature correctly

Not getting the desired result for your baked goods can be down to oven temperature.

If your oven is too hot, baked goods will cook on the outside too quickly and fall, resulting in undercooked or overcooked, flat, dense baked goods. JAn oven that is too cold will result in rubbery or undercooked baked goods that are difficult to bake for too long.

You must respect the right cooking temperature and only put the food in the oven when it has reached the desired temperature.

8. You cook gluten-free

Gluten-free cooking that’s all well and good, but it can be a difficult skill to achieve. Gluten-free baked goods tend to be doughy, dense, and tough, so be careful with them.

If you want to cook gluten-free, be sure to follow gluten-free recipes instead of trying to adapt a gluten-based recipe. This will give you a much better chance of success.

Also, be sure to use the best gluten-free flours. Some work better than others and will give more realistic results.
